the moment of truth

A raw, un-roasted coffee bean isn’t much to look at.

it’s faded, greenish, small and kind of shriveled, with a relatively smooth half-moon surface on one side, and a small crack winding through the flat exterior on the other. but to coffee roasters, the do-it-all artisans of the coffee trade, the ones who turn raw beans into the dark, stimulating brew that steams in our cups and mugs every morning, these green coffees are reservoirs of information.

artisan roasters can glance at a tray of green coffee beans and pinpoint the processing method; “washed” in water or “natural”, dried in the sun. these roasters can oftentimes pinpoint the origin of the coffee, be it central or south america, africa or indonesia.

contrary to popular belief, the true purpose of roasting is not so much to define the coffee flavor, but to coax out the best characteristics of a specific coffee. a single coffee offers several inherent flavors and aromas, but the roast level will determine which and how many of those flavors are exposed.

there’s no one correct way to roast a specific coffee. it’s up to the roaster to interpret a coffee’s strengths and weaknesses and draw out the best qualities for the consumer. once a roaster settles on a successful roast profile, he sticks to that roast profile religiously, as consistency is the key to a good coffee. the roasting process removes much of the moisture from the bean while caramelizing the sugars inside, contributing to a coffee’s color, flavor and body.

during the roasting process, the coffee emits two loud pops, known, in the roasting trade, as first crack and second crack. at first crack, the beans are relatively uneven in color, but as the interior temperature of the beans continues to rise, they experience a more uniform browning. this is the moment of truth for coffee roasters; a roast that’s stopped midway between first and second crack is generally considered a light roast, a coffee that’s roasted just barely beyond the second crack is a medium roast, and a coffee that’s roasted well beyond the second crack is a dark roast.

watching an artisan work the roasting machine illuminates the importance of the human element in the process. periodically pulling small samples to check the color and aroma, the colors of the roasting coffee can reveal a lot and are as important to the artisan roaster as the colors of bread to a baker.

caffeine - what's it mean?

90% of Americans consume caffeine on a daily basis.

caffeine is an alkaloid found in some of our favorite plants; namely coffee plants, tea leaves and, in small doses, cocoa beans.

in its natural form it works as a pesticide, paralyzing and poisoning insects.

like most alkaloids, caffeine has a pharmacological effect on animals and people.

drip coffee (115-175 mg) typically contains more caffeine than espresso (100-110 mg).

darker roasted coffees tend to have less caffeine than lighter ones.

caffeine intoxications can occur when a person ingests more than 250 mg of caffeine.

caffeine, theobromine and theophylline are alkaloids that occur naturally (and often together) in products like coffee, tea, cocoa beans, and mate.

theobromine is a mood enhancer and muscle relaxant.

theophylline increases blood pressure and soothes respiratory muscles.

caffeine affects metabolism and the central nervous system.

a lethal dose of caffeine is 10g, or in the neighborhood of 80 cups of drip coffee.

costa rica monte cristo

estate grown beans from the country that is synonymous with excellent coffee

The large family owned La Amistad Estate is located in the extreme south of Costa Rica situated on a mountainside at over 1,200 meters above sea level.  The farm is surrounded on three sides by one of the largest biodiverse rainforests in all of Central America.  The family has attempted to retain the integrity of this rich biological setting by leaving bands of primary forest between parcels of coffee.  These bands are connected to the rainforest and offer an alley way or corridor back to the rainforest for the wildlife.  The farm maintains a low but healthy shade covering within the parcels.  La Amistad (the "Friend") begins harvesting earlier, late October,  than most other regions because of its location with harvest continuing through March.  All of the coffee is processed on site at the farm's beneficio.  Clear, fresh water that runs from the rainforest to the farm is used both for the mills washing process and to generate power to run the machinery.  The coffee is then sun dried on cement patios in as much as space and climatic conditions allow.  The cup is slightly acidic, well bodied with a wonderful aroma..

brazil

brazil santos, a full bodied, 100% organic brazilian fair trade coffee is a well-balanced coffee with full body and tropical fruit accents.

timor

despite gaining political independence from indonesia, timor-leste (formerly east timor) still has a long way to go. it's a rough place. many institutions are not self-sufficient and the economy has few bright spots.

coffee, however, is one of them. timor has 2 major regions producing coffee: maubesse and the aifu region, and these regions have been moving quickly to upgrade and improve their ability to deliver their wonderful, indigenous beans.

the cooperative mills that are the source for our organic coffee have invested in new facilities and wet-processing equipment, which have greatly improved their ability to receive and sort only red, ripe cherry and provide us with fair trade, organic certified beans.

as for the flavor, timor is not a funky, earthy coffee like sumatra; it has a cleaner profile and could be called a "quintessential crowd-pleasing coffee".

our timor coffee definitely has an initial hint of its indonesian roots, with just a touch of pleasant woody forest flavor amid a more pronounced sweet herbal note in the aromatics. the result is a striking coffee at a dark roast.

nicaragua coe

this fair trade, cup of excellence winning coffee comes from a small family run estate.

kenya kia oro estate

there is VERY LITTLE organic coffee produced in kenya. at least two factors account for this. first is that there is little governmental support or official policies regarding organic agriculture in the country. another factor is the prevalence of various diseases and pests, including coffee berry disease (colletotrichum coffeanum), coffee leaf rust (hemileia vastatrix), and coffee berry borer (hypothenemus hampei).

kia ora estate is the first certified organic coffee farm in all of kenya. by inter-growing macadamia and coffee trees the health of both crops is complemented. groundwork has secured a number of bags of this coffee and we plan on roasting it lightly; no oils on the surface of the beans.

This coffee has everything you look for in good Ethiopias; rich full body and bright, raw flavor. The flavor is as exotic as the land.

this is a fairly traded, direct trade coffee, exclusively cultivated for groundwork coffee company.

inza is located in the cauca region on the eastern side of the cordillera central in southwestern colombia and produces some of colombia's most enjoyable coffees. this one is no exception.

in the cup, this coffee is clean, deeply flavored (slightly chocolaty), winy and sweet with the crisp fruity brightness (acidity) that is often associated with colombian coffees.

monsooned malabar

Many of our customers have asked for a “low acid” coffee for health purposes.

monsooned malabar is a variety of dry processed coffee beans, unique to the Malabar coast of Karnataka and Kerala. The harvested and processed beans are exposed to the monsoon winds for a period of three to four months, causing the beans to swell and lose their original acidity, resulting in a sweet syrupy brew.

During the time of the British Raj, when, during the months that the beans were transported by sea from India to Europe, the humidity and the sea winds combined to cause the coffee to ripen from the fresh green to a more aged pale yellow.

groundwork has created this special blend of low-acid coffee with Monsooned Malabar beans as the basis.
